Aside from our usual “Tuesday Night Family Dinner”, this week the Nietos decided to cook dinner for our grandpa! Once a month, our grandpa takes the five of us out to dinner or a movie (last Month we went on our Panama Trip!) to catch up and just spend quality Abuelo-Nietos time. This month, instead of waiting for him to plan our next night, we decided to make it even more special and have dinner cooked by us!
The setting was beautiful, the food was delicious & the company – THE BEST!
Here are the recipes to everything we made so you can try it too!
2 tbsp Basil, fresh
3/4 tsp Garlic powder
2 tbsp Green onion
1/2 tsp Thyme, dried
2 Yellow squash, medium-sized
2 Zucchini, medium-sized
1 Salt and fresh ground black pepper
1 cup Cheese, low-fat white
1/2 cup Parmesan
1 lb Chicken breasts – cut into bite size pieces, skinless boneless
2 tbsp Cilantro
2 Garlic cloves
1 Lime, juice of
2 tbsp Honey
3 tbsp Soy sauce – you can use gluten – free soy sauce to make this recipe, gluten – free
1/4 tsp Pepper
1/2 tsp Red pepper flakes
1/4 tsp Salt
1 tbsp Vegetable oil
3 cloves Garlic
1 Onion
2 tbsp Parsley, fresh
1 28 ounce can Tomatoes
2 Tomatoes, medium
1 tbsp Tomato puree
1 lb Penne pasta, whole wheat
1 tsp Red pepper flakes
1 Salt
2 tbsp Olive oil, extra-virgin
1/2 cup Heavy cream
1/2 cup Pecorino romano, grated
